Baking

After many years of baking at home for family and friends, at Treats of Wiscasset Bakery and Boothbay Botanical Gardens Marketplace, I have certified my home kitchen. 

I have stocked my pantry with fresh spices and nuts, organic flours and sugar and rich dark chocolates. I will be making cakes, pies, tarts, and cookies inspired by the European baking on which i was raised, as well as contemporary and hip approaches to melding flavors and ingredients. When I choose and refine recipes, I pay special attention not only to the flavors but also the sugar and fat ratio’s. The right amount and type of sweetener can enhance subtle flavors rather than dominate. A proper amount of fat from butter or nuts, slows the absorption of the sugar in one’s system and adds depth to the flavor of the baked good. The baked goods I make are well considered, they should be eaten thoughtfully and mindfully. Notice the citrus tones in the apple pie, the crunch on the outside of the crust and the soft chewy underlayer. When time allows, I love a baking challenge… so feel free to email me your favorite pastime dessert recipe that your parent or grandparent used to make and I will happily try to recreate!
